Ingredients

  • 1 pound ground venison sausage or ground pork sausage for a milder taste
  • 2/3 cup whole milk
  • 1 cup freshly shredded sharp cheddar cheese
  • 1 tablespoon Worcestershire sauce
  • 3 cups biscuit-style baking mix such as Bisquick Original
  • 1 cup shredded mozzarella cheese

Instructions

  • Heat the oven to 400°F (200°C). Allow it to reach the full temperature before baking so the sausage balls cook evenly.
  • Place the biscuit baking mix, ground venison sausage, sharp cheddar, mozzarella, Worcestershire sauce, and whole milk in the bowl of a stand mixer. Blend at medium speed until the ingredients are evenly incorporated and the mixture forms a cohesive dough.
  • Using a cookie scoop or your hands, portion and roll the prepared mixture into balls approximately the size of ping-pong balls. Arrange them on a greased baking sheet, leaving a small amount of space between each piece for consistent baking.
  • Transfer the baking sheet to the preheated oven. Bake the sausage balls for 15–17 minutes, or until they develop a golden exterior and are thoroughly cooked.
  • Remove the sausage balls from the oven and allow them to cool briefly before serving. Serve warm as an appetizer, party food, or savory snack.

Notes

Freshly grating the cheeses can provide a softer, gooier texture and fuller cheese flavor.
Ground pork sausage may be substituted for the venison sausage when a milder flavor is preferred.
