Ingredients

  • 1 cup full-fat cottage cheese recommended for the best texture
  • ¼ teaspoon black pepper preferably freshly ground
  • ½ cup grated Parmesan cheese
  • ½ teaspoon onion powder
  • 1 large head cauliflower steamed until tender and thoroughly mashed
  • ¼ cup finely chopped green onions
  • 1 large egg
  • ½ cup breadcrumbs preferably panko for a crisper finish
  • ½ teaspoon garlic powder
  • ½ teaspoon fine sea salt

Instructions

  • Prepare the oven and cauliflower. Preheat the oven to 400°F (200°C).
  • Cook the cauliflower florets by steaming or boiling them until tender, approximately 5–7 minutes. Drain thoroughly and allow the cauliflower to cool slightly.
  • Mash and combine. Transfer the cooled cauliflower to a mixing bowl and mash it until smooth.
  • Add the cottage cheese, egg, garlic powder, onion powder, salt, and black pepper. Stir thoroughly until the ingredients are evenly incorporated.
  • Shape the tots. Gradually work the breadcrumbs into the cauliflower mixture. The finished mixture should hold together firmly enough to shape without becoming excessively dry.
  • Scoop out small portions and form each one into a tot shape. Keep the pieces approximately equal in size to promote consistent baking.
  • Bake. Arrange the shaped tots on a parchment-lined baking sheet.
  • Bake in the preheated oven for 20–25 minutes, or until the tots develop a crisp texture and an evenly golden-brown exterior.
  • Serve. Remove the baked tots from the oven and allow them to cool briefly before serving.
