Place the heavy cream, confectioners’ sugar, and vanilla extract in the bowl of a stand mixer. A handheld electric mixer and a large mixing bowl may also be used.
Beat the ingredients at medium-high speed until the cream becomes smooth and voluminous and forms stiff peaks. Stop mixing as soon as the whipped cream holds its shape to prevent over-whipping.
Spread a very light coating of whipped cream across the bottom of a 9 × 9-inch square pan. This thin layer will help keep the first row of graham crackers securely in place.
Cover the cream with a single layer of graham crackers. Break or trim the crackers where necessary so that the bottom of the pan is fully covered.
Spoon one-third of the whipped cream over the crackers and use a spatula to spread it into an even layer.
Arrange one-third of the sliced strawberries uniformly over the whipped cream.
Repeat the layering sequence twice more, adding graham crackers, whipped cream, and strawberries each time. The completed dessert should contain three sets of layers and finish with strawberries on top.
For a polished appearance, position the final strawberry slices in an orderly decorative arrangement.
Cover the pan securely with plastic wrap and place it in the refrigerator for a minimum of 4 hours. The dessert may also be chilled overnight.
During refrigeration, the graham crackers absorb moisture from the cream and berries, allowing them to soften while the flavors blend into a cohesive, sliceable cake.
