Ingredients

  • 1 can 15 oz pure pumpkin purée
  • 1 teaspoon ground cinnamon preferably freshly ground
  • 1 unbaked 9-inch pie crust
  • ¾ cup granulated sugar
  • 12 fluid ounces evaporated milk
  • ¼ teaspoon ground cloves
  • 2 large eggs brought to room temperature, approximately 70°F
  • ½ teaspoon fine salt
  • ½ teaspoon ground ginger

Instructions

  • Set the oven to 425°F and allow it to heat fully before the assembled pie is placed inside.
  • Place the eggs and pumpkin purée in a large mixing bowl. Beat them together until the mixture is evenly blended and smooth.
  • In a separate bowl, thoroughly combine the granulated sugar, cinnamon, salt, ground ginger, and cloves.
  • Add the sugar-and-spice blend to the pumpkin and egg mixture. Stir until the seasonings are uniformly distributed throughout the filling.
  • Slowly pour the evaporated milk into the pumpkin mixture while stirring. Continue mixing until the filling has a smooth, consistent appearance.
  • Carefully transfer the prepared pumpkin filling into the unbaked 9-inch pie crust.
  • Place the pie in the preheated 425°F oven and bake for 15 minutes.
  • After the initial 15 minutes, lower the oven temperature to 350°F. Continue baking for another 40–50 minutes, or until the filling is set.
  • Gently move the pie to assess the center. A slight jiggle is acceptable because the filling will continue to firm as it cools. Alternatively, insert a sharp knife near the center; the pie is ready when the knife comes out clean.
  • Transfer the baked pie to a wire cooling rack and allow it to cool completely. Serve once cooled, accompanied by whipped cream and, if desired, a caramel pecan topping.

Notes

Room-temperature eggs, approximately 70°F, help the filling emulsify more evenly. Freshly ground cinnamon may provide a more pronounced aromatic flavor.
