Ingredients

  • 1 can sweetened condensed milk 14 fl oz
  • 1 1/2 tablespoons pumpkin pie spice blend preferably freshly ground for a stronger aroma
  • 1 prepared 9-inch pie crust
  • 3/4 teaspoon salt
  • 1 can pumpkin purée
  • 1 tablespoon pure vanilla extract
  • 3 large eggs brought to room temperature

Instructions

  • Partially bake the pie crust. Preheat the oven to 350°F. Set the prepared 9-inch pie shell on a baking sheet to encourage more uniform heating and help reduce the chance of a soft bottom crust.
  • Bake the empty crust for 10–12 minutes, just until it has begun to set without becoming fully baked. Remove it from the oven and allow it to cool slightly while preparing the pumpkin mixture.
  • Prepare the pumpkin filling. Place the room-temperature eggs, pumpkin purée, sweetened condensed milk, pumpkin pie spice, vanilla extract, and salt in a large mixing bowl.
  • Whisk the ingredients by hand until the mixture is completely smooth, evenly blended, and free from visible lumps. Avoid excessive whisking, since incorporating too much air can make the finished filling less dense and creamy.
  • Fill the crust and begin baking at high heat. Pour the prepared pumpkin filling into the partially baked pie shell.
  • Raise the oven temperature to 425°F. Transfer the pie to the oven and bake for exactly 15 minutes. This initial period of higher heat helps establish the outer portion of the filling while encouraging slight caramelization.
  • Reduce the temperature and complete the bake. After the first 15 minutes, lower the oven setting to 325°F without removing the pie. Continue baking for another 30–40 minutes.
  • The pie is ready when the outer portion is firm and fully set while approximately the center 1 inch still moves slightly when the pie is gently shaken. The remaining heat will continue setting the middle as the pie cools.
  • Cool and chill until fully set. Remove the finished pie from the oven and place it on a wire cooling rack or heat-safe countertop.
  • Allow the pie to reach room temperature for at least 2–3 hours so the custard filling can firm properly. Once cooled, refrigerate it for a minimum of 4 hours, or preferably overnight, before slicing.
