Crack the 2 large eggs into a wide, shallow bowl and beat them thoroughly.
Add 1/4 cup pumpkin purée, 1/4 cup milk, 1/2 teaspoon ground cinnamon, and 1 teaspoon vanilla extract.
Whisk until all of the ingredients are evenly incorporated and the mixture has a smooth consistency.
Using a sharp knife, cut each of the 4 whole wheat bread slices into strips.
Approximately four strips per slice works well, although the pieces may be cut slightly larger or smaller according to preference.
Working with only a few pieces at a time, place the bread strips into the prepared pumpkin and egg mixture.
Allow each side to absorb the mixture for approximately 10–15 seconds. The bread should be well coated without becoming excessively saturated or soggy.
Warm 1–2 teaspoons coconut oil in a large frying pan over medium heat.
Arrange the soaked bread strips in the pan in one even layer, leaving enough space between the pieces to prevent overcrowding.
Cook the first side for 2–3 minutes, or until it develops a golden-brown color and a lightly crisp surface.
Turn each strip over and cook the opposite side for an additional 2–3 minutes, until similarly golden and cooked through.
Repeat as necessary with any remaining soaked bread strips.
Transfer the finished pumpkin French toast strips from the frying pan and serve them warm.
They may be enjoyed without toppings or accompanied by fresh fruit or maple syrup.
