Instructions
Preheat the oven to 350°F (175°C). Lightly coat a loaf pan with nonstick spray or a small amount of melted coconut oil to prevent the bread from sticking.
Place the oat flour, baking soda, and baking powder in a medium mixing bowl. Stir thoroughly until the leavening ingredients are evenly distributed throughout the flour.
In a separate bowl, whisk the eggs with the unsweetened applesauce, pumpkin purée, and melted coconut oil. Continue mixing until the wet ingredients form a smooth, uniform mixture.
Pour the wet mixture into the bowl containing the dry ingredients. Blend with a sturdy spoon or mixer until a smooth, evenly combined batter develops.
Transfer the batter to the prepared loaf pan and level the surface. Gently tap the pan against the countertop to release any trapped air bubbles.
Set the loaf pan in the preheated oven and bake for 45–50 minutes. The bread is ready when a toothpick inserted into the center emerges clean or with only a few moist crumbs.
Remove the loaf from the oven and allow it to rest in the pan for approximately 10 minutes. Carefully turn it out onto a wire rack and let it cool completely before slicing and serving.
