Ingredients

For the cake:

  • 2 teaspoons sodium bicarbonate baking soda
  • 1 teaspoon pure vanilla essence
  • ½ teaspoon table salt
  • 2 large eggs gently whisked
  • 1 can 20 oz crushed pineapple, juice included – do not drain
  • cups white granulated sugar
  • 2 cups plain all-purpose flour

For the frosting:

  • 1 teaspoon vanilla extract
  • 2 cups powdered confectioners' sugar
  • ½ cup 1 stick unsalted butter, softened to room temperature
  • 1 package 8 oz cream cheese, brought to room temperature for softness
  • 1 cup coarsely chopped walnuts or pecans optional garnish

Instructions

  • Preheat the oven to 350°F (175°C). Lightly grease a 9x13-inch rectangular baking pan to prevent sticking.
  • In a sizable mixing bowl, combine the flour, sugar, salt, and baking soda. Whisk until the dry ingredients are evenly incorporated.
  • Introduce the eggs, vanilla extract, and the full contents of the crushed pineapple can, including the juice. Stir gently until the mixture is cohesive, avoiding overmixing.
  • Transfer the batter into the greased baking dish and smooth the top evenly. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center emerges clean.
  • Allow the cake to cool completely in the pan before applying the frosting.
  • To prepare the topping, beat together the softened cream cheese and butter in a large bowl until the texture is smooth and uniform. Gradually blend in the powdered sugar and vanilla, beating until the mixture becomes light and fluffy.
  • Evenly spread the prepared frosting over the fully cooled cake. If desired, finish by sprinkling chopped nuts across the top for added texture and flavor.

Notes

Ensure the cake is completely cooled before frosting to prevent the topping from melting. Store any leftovers in the refrigerator for best texture and flavor retention.
