Ingredients

Sweet Potato Filling

  • 4 pounds sweet potatoes peeled and cut into roughly 1-inch cubes
  • 1 teaspoon salt
  • 2 large eggs
  • 1/4 cup pecans very finely chopped for even dispersal
  • 1 teaspoon pure vanilla extract
  • 1/2 cup unsalted butter softened at room temperature
  • 1/2 cup whole milk brought to room temperature
  • 3/4 cup light brown sugar firmly packed

Marshmallow-Pecan Topping

  • 1/4 cup pecans chopped, optional but recommended
  • 2 cups miniature marshmallows

Instructions

  • Cook the sweet potatoes. Peel the sweet potatoes and cut them into approximately 1-inch cubes so that they cook at a consistent rate. Transfer them to a large pot and add enough cold water to cover them completely.
  • Bring the water to a boil over high heat. Reduce the heat to maintain a simmer and cook the sweet potatoes for 10–15 minutes, or until they are completely tender when pierced with a fork.
  • Drain the potatoes thoroughly in a colander. Press them gently to help release excess moisture, as retaining too much water can result in a loose or soggy casserole.
  • Prepare the oven and baking dish. While the potatoes are cooking, preheat the oven to 375°F with the rack positioned in the center. Lightly coat a 9 × 13-inch casserole dish, or a similarly sized baking dish, with cooking spray.
  • Make the sweet potato filling. Transfer the drained sweet potatoes to a large mixing bowl while they are still warm. Add the softened unsalted butter, packed light brown sugar, room-temperature whole milk, eggs, vanilla extract, and salt.
  • Beat the mixture with an electric mixer at medium speed for approximately 2–3 minutes, continuing until the sweet potatoes are smooth, creamy, and evenly blended.
  • Using a spoon or spatula, carefully fold in the finely chopped 1/4 cup pecans until they are evenly distributed throughout the sweet potato mixture.
  • Assemble the casserole. Spoon the prepared sweet potato filling into the greased casserole dish. Spread it evenly with a spatula, smoothing the surface into a level layer.
  • Distribute the miniature marshmallows evenly over the sweet potato mixture, leaving small spaces between some of them so they can expand and melt as the casserole bakes.
  • Sprinkle the remaining 1/4 cup chopped pecans over the marshmallows, if using. The nuts will toast during baking and add a crisp, nutty finish.
  • Bake the casserole. Place the assembled dish in the preheated 375°F oven and bake for 25–30 minutes.
  • Begin checking the casserole at approximately 25 minutes. It is ready when the marshmallows have puffed and developed a light golden-brown color, the edges are gently bubbling, and the sweet potato filling is thoroughly heated.
  • Rest and serve. Remove the casserole from the oven and allow it to stand for 5 minutes. This brief resting period helps the filling settle slightly while keeping the marshmallow topping soft and gooey.
  • Serve the casserole warm directly from the baking dish.

Notes

Using room-temperature milk helps it blend more smoothly into the warm sweet potatoes and contributes to a velvety consistency.
Drain the cooked sweet potatoes thoroughly before mixing the filling, since excess water can negatively affect the casserole's texture.
The additional 1/4 cup of pecans in the topping is optional, although it provides extra crunch and a richer toasted-nut flavor.
