8ozsmall dry pasta
1/2cupmilk or heavy cream
2cupslow-sodium chicken broth
1 10ozcan diced tomatoes
1/2tspblack pepper
Instructions
Pour olive oil into a 4–5 quart sauté pan and set over medium-high heat.
Sauté the kielbasa slices and diced onion until lightly browned. Incorporate the minced garlic and cook briefly until aromatic, approximately 30 seconds.
Pour in the chicken broth, diced tomatoes, milk or cream, uncooked pasta, salt, and pepper. Allow the mixture to simmer for 15 minutes, or until the pasta is cooked through.
Withdraw the pan from heat and fold in half of the shredded Cheddar. Scatter the remaining cheese atop, then cover until the cheese melts and becomes bubbly with golden spots.
Garnish with sliced scallions and present immediately.
