Ingredients

  • 225 grams 8 ounces full-fat cream cheese, softened to room temperature
  • 1/2 cup crispy bacon bits cooked and crumbled (approximately 6 slices)
  • 1 cup finely shredded extra-sharp cheddar cheese
  • 1/4 teaspoon powdered garlic
  • 1/4 teaspoon ground black pepper
  • 1/4 cup chopped fresh chives with extra reserved for coating
  • 1/4 teaspoon onion powder
  • 1/4 cup finely chopped pecans optional, for outer coating
  • Mini pretzel rods or cocktail toothpicks for serving

Instructions

  • In a medium-sized mixing bowl, blend the softened cream cheese with the shredded cheddar cheese, half of the prepared bacon, chopped chives, garlic powder, onion powder, and ground pepper. Stir thoroughly until the mixture is evenly combined and smooth.
  • Using a tablespoon measure, scoop out portions of the cheese mixture. With clean hands, roll each scoop into a compact ball. Continue until all of the mixture is formed into balls.
  • In a shallow dish, combine the remaining bacon crumbles, extra chopped chives, and chopped pecans if using. Gently roll each cheese ball in the coating mixture to cover the outside evenly.
  • Arrange the coated balls on a tray lined with parchment paper. Transfer the tray to the refrigerator and chill for a minimum of 30 minutes, allowing the bites to firm.
  • Just before serving, insert a mini pretzel stick or a toothpick into the center of each cheese bite. Serve cold as a delightful appetizer.
