Ingredients

Quinoa Base

  • 1 cup dry quinoa
  • 2 cups vegetable broth or chicken broth

Salad Mix-Ins

  • 1/2 cup roasted salted pistachios, roughly chopped
  • 1 English cucumber cut into small dice
  • 1 cup crumbled feta cheese 4 ounces
  • 1/2 cup fresh mint leaves loosely measured and finely chopped
  • 1 can 15 ounces chickpeas (garbanzo beans), thoroughly rinsed and drained
  • 1/2 small red onion finely minced
  • 1/2 cup fresh parsley firmly packed before mincing
  • Fine salt and freshly ground black pepper according to taste

Lemon-Honey Dressing

  • 1 tablespoon honey
  • 1/2 cup extra-virgin olive oil
  • Salt and freshly ground black pepper as needed
  • 1/2 cup freshly squeezed lemon juice from approximately 3–4 lemons

Instructions

  • Place the freshly squeezed lemon juice, extra-virgin olive oil, honey, and a generous pinch each of salt and black pepper in a tightly sealed jar or small mixing bowl.
  • Shake the covered jar vigorously, or whisk the mixture thoroughly if using a bowl, until the dressing becomes smooth and emulsified.
  • Taste and adjust the salt and pepper as desired. If the lemons are especially tart, slightly more honey may be used to balance their acidity.
  • Add the dry quinoa and stir briefly. Reduce the heat to low, cover the saucepan, and simmer for 12–15 minutes, or until the grains are tender and the broth has been completely absorbed.
  • Fluff the cooked quinoa gently with a fork, then transfer it to a large bowl or suitable storage container and allow it to reach room temperature.
  • Cover the cooled quinoa and refrigerate until thoroughly chilled. Cooling it completely helps the grains retain their texture and reduces the chance of the finished salad becoming soggy.
  • While the quinoa cools, dice the English cucumber and finely mince the red onion and parsley. Finely chop the mint leaves.
  • Roughly chop the roasted salted pistachios and crumble the feta cheese if it has not already been prepared.
  • Rinse the garbanzo beans thoroughly and allow them to drain well before assembling the salad.
  • Transfer the cold quinoa to a large mixing bowl. Add the drained garbanzo beans, diced cucumber, minced red onion, parsley, mint, chopped pistachios, and crumbled feta.
  • Pour over the preferred amount of lemon-honey dressing and gently toss until the quinoa and salad ingredients are evenly coated.
  • Taste the finished salad and season with additional salt and black pepper as necessary.

Notes

The quinoa may be prepared one day in advance and refrigerated, making final assembly more convenient while ensuring the grains are completely chilled.
For a salad that will be refrigerated before serving, a small portion of the dressing may be reserved and tossed with the salad shortly before serving to refresh its flavor and texture.
