½cupsemi-sweet chocolate bitsoptional, for enhanced depth of flavor
3cupscrisp dry chow mein noodles
1cupfinely shredded sweetened coconutoptional, for added chew and sweetness
Instructions
In a large microwave-safe mixing bowl, combine the peanut butter, butterscotch morsels, and chocolate chips if using. Heat in 30-second bursts in the microwave, stirring between each interval, until the mixture becomes smooth and fully melted.
Add the chow mein noodles and shredded coconut, if desired, and gently stir to evenly coat all components with the warm mixture.
Using a spoon, drop portions of the coated mixture onto a baking sheet lined with parchment paper, spacing them apart to prevent sticking.
Place the tray in the refrigerator and allow the haystacks to chill for approximately 30 minutes, or until they are set and firm to the touch.
Once hardened, serve immediately or transfer to an airtight container. Store at room temperature for up to one week, or refrigerate for longer freshness.
