Ingredients

  • 1 cup full-fat sour cream
  • ½ cup yellow cornmeal
  • 2 large eggs beaten
  • 14 oz creamed corn preferably a good-quality variety
  • ¼ teaspoon salt
  • 1 stick unsalted butter melted
  • cup all-purpose flour
  • 2 tablespoons vegetable oil
  • A small pinch of cayenne pepper
  • 14 oz canned whole corn kernels including the canning liquid
  • ¼ cup granulated white sugar
  • 1 tablespoon baking powder

Instructions

  • Preheat the oven to 325°F (165°C) so it reaches the proper temperature before the casserole mixture is ready.
  • Place the flour, cornmeal, sugar, baking powder, salt, and cayenne pepper in a mixing bowl. Whisk thoroughly until the dry ingredients are evenly distributed.
  • Step 3: Add the sour cream, beaten eggs, melted unsalted butter, vegetable oil, creamed corn, and canned corn kernels together with all of their liquid. Stir well until the ingredients are completely incorporated and the batter has an even consistency
  • Transfer the prepared mixture to a 2–2.5-quart (2–2.5-litre) or 8-cup casserole dish. Level the surface so the casserole cooks as uniformly as possible.
  • Bake for 55–60 minutes in a conventional oven, or approximately 50 minutes in a fan-forced/convection oven. The finished casserole should have a deep golden-brown top and be set around the edges while retaining a slight jiggle at the center. The center will continue to firm as the casserole cools.
  • Remove the casserole from the oven and allow it to cool slightly before serving. Serve either warm or at room temperature.
