Ingredients

  • 2 tablespoons Grade A amber maple syrup preferably, for a well-balanced sweetness
  • 1 teaspoon high-quality pure vanilla extract
  • 2 cups good-quality cottage cheese such as Daisy, for the smoothest texture

Instructions

  • Add the cottage cheese, maple syrup, and vanilla extract to a high-speed blender.
  • Blend for 2–3 minutes, or until the mixture becomes completely smooth and creamy. Stop the blender as needed and scrape down the sides with a spatula so all ingredients are evenly incorporated.
  • Transfer the finished pudding into individual serving bowls or suitable storage containers.
  • Serve the pudding plain, or top it with fresh berries, nuts, or granola for added flavor and contrasting texture.
  • Place any remaining pudding in airtight containers and keep refrigerated for up to 5 days to maintain freshness.
