Ingredients

  • 1 cup plain cottage cheese preferably full-fat for a richer consistency
  • 1 small pinch of salt
  • ½ medium cucumber finely grated and thoroughly squeezed to remove excess moisture
  • 1 tablespoon fresh dill finely chopped for the best flavor
  • 1 teaspoon olive oil
  • ½ garlic clove freshly minced for a more pronounced garlic taste
  • 2 tablespoons fresh mint chopped

Instructions

  • Slice the cucumber in half lengthwise. Using a small spoon, scrape out and discard the seeds to reduce the amount of moisture that could dilute the dip.
  • Finely grate the cucumber without removing its skin. Chop the fresh mint and dill, if using, and mince the garlic until fine.
  • Transfer the grated cucumber to a clean tea towel. Gather the towel securely around the cucumber and squeeze it firmly over the sink, removing as much liquid as possible. Proper draining is important for maintaining a thicker dip consistency.
  • Place the drained cucumber in a bowl along with the chopped mint, dill, and minced garlic. Add the cottage cheese, olive oil, and salt, then stir thoroughly until all ingredients are evenly incorporated.
  • Transfer the finished cottage cheese tzatziki dip to a serving bowl and serve as desired.
