Ingredients

  • 6 pitted dates used for natural sweetness and caramel-like flavor
  • ½ teaspoon vanilla extract such as Simply Organic
  • 1 container 16 ounces full-fat cottage cheese, blended finely for a silky consistency
  • 1 small pinch of sea salt
  • ¼ cup honey

Instructions

  • Blend the cottage cheese base. Place the 16-ounce container of full-fat cottage cheese in a food processor or blender along with the honey, vanilla extract, and sea salt. Process until the mixture becomes completely smooth and creamy.
  • Incorporate the dates. Add the 6 pitted dates to the blended cottage cheese mixture. If the dates are firm, soak them in water for approximately 5 minutes to soften them before adding.
  • Create the caramel-like texture. Blend once more, stopping while small pieces of date are still visible. The dates should be broken into tiny chunks rather than completely puréed, providing texture throughout the ice cream.
  • Freeze until firm. Pour the finished mixture into a bowl or loaf pan and spread it into an even layer. Transfer the container to the freezer for 3–4 hours, or until the ice cream has fully set.
  • Serve. Once frozen to the desired consistency, scoop the cottage cheese salted caramel ice cream into individual servings and serve.
