Ingredients

For the Dip:

  • 2 tablespoons fresh dill finely chopped
  • 1/2 cup plain full-fat Greek yogurt for optimal creaminess
  • 1/2 teaspoon onion powder
  • 2 tablespoons pickle brine
  • 1 cup plain small-curd cottage cheese preferably 4% milkfat such as Daisy
  • 2 teaspoons white wine vinegar
  • 1/2 teaspoon salt
  • 1/2 cup pickles cut into approximately 1/4-inch pieces
  • 1/2 teaspoon garlic powder
  • 2 tablespoons fresh chives chopped

For Garnishing:

  • Freshly ground black pepper
  • Diced pickles
  • Olive oil for drizzling
  • Chopped fresh chives

Instructions

  • Add the cottage cheese to a small food processor. Pulse until completely smooth and creamy, creating the base of the dip.
  • Spoon the blended cottage cheese into a mixing bowl. Add the Greek yogurt, chopped pickles, pickle brine, white wine vinegar, fresh dill, fresh chives, garlic powder, onion powder, and salt.
  • Stir thoroughly with a spoon or small rubber spatula until all of the ingredients are evenly incorporated. Taste and adjust the salt or white wine vinegar as desired.
  • Finish the dip with a light drizzle of olive oil, additional diced pickles, chopped chives, and freshly ground black pepper.
  • Serve with crackers or fresh vegetable sticks, such as cucumber, celery, carrots, or sliced bell peppers.
