Cottage Cheese French Toast

Ingredients

For the batter:

  • ½ cup unsweetened applesauce
  • 2 large whole eggs
  • 1 tablespoon preferred sweetener such as monk fruit or an erythritol blend
  • ½ teaspoon finely ground cinnamon
  • ½ cup full-fat cottage cheese for a richer texture
  • 1 scoop vanilla-flavored protein powder
  • 1 teaspoon pure vanilla extract

For cooking:

  • Thick-cut Texas toast as needed
  • Unsalted butter or non-stick cooking spray as needed for greasing the pan

For serving:

  • Maple syrup as desired

Instructions

  • Set up a blender or food processor. Add the eggs, cottage cheese, vanilla extract, cinnamon, and sweetener.
  • For additional protein, incorporate one scoop of vanilla protein powder, or use another preferred protein powder flavor.
  • Blend the ingredients until the mixture becomes smooth and evenly combined.
  • Transfer the prepared batter to a shallow dish wide enough to comfortably fit each slice of bread.
  • Choose the preferred bread, such as low-carb bread, a higher-protein variety, or thick-cut Texas toast.
  • Place one slice into the batter and leave it to soak for several minutes. A longer soaking period allows the bread to take in a greater amount of the mixture.
  • While the bread is soaking, place a skillet or griddle over medium heat.
  • Lightly coat the cooking surface with unsalted butter or non-stick cooking spray to help prevent sticking.
  • Allow the pan to become properly heated before adding the soaked bread.
  • Carefully transfer the soaked bread to the heated skillet or griddle.
  • Cook for approximately 2–3 minutes on each side, or until both surfaces develop a golden-brown color.
  • Thicker slices may require a modest increase in cooking time to ensure the center is thoroughly cooked.
  • Serve the cottage cheese French toast warm and finish with maple syrup or other preferred toppings. Protein frosting may also be added as an optional topping.

Notes

The recipe may be doubled or tripled when preparing a larger quantity.
For easier morning preparation, the blended mixture can be made the night before.
Leftover French toast may be reheated for approximately 30 seconds in the microwave, warmed in a toaster, or heated in an air fryer for a couple of minutes.
