Ingredients

  • 1/4 cup light olive oil
  • 1/2 teaspoon dried parsley
  • 1/3 cup plain unsweetened almond milk, plus additional as needed for thinning
  • 1/2 teaspoon Dijon mustard such as Grey Poupon for a traditional flavor
  • 1/2 teaspoon salt

Instructions

  • Measure the cottage cheese, almond milk, Parmesan, olive oil, lemon juice, Dijon mustard, garlic powder, salt, pepper, Worcestershire sauce, and dried parsley before beginning.
  • Place the cottage cheese, unsweetened almond milk, and finely grated Parmesan cheese in a blender or chopper cup.
  • Add the light olive oil, fresh lemon juice, Dijon mustard, garlic powder, salt, black pepper, Worcestershire sauce, and dried parsley.
  • Process the mixture on high speed until completely smooth and evenly combined, with no visible lumps remaining.
  • Examine the thickness after blending. If a thinner dressing is preferred, add a small amount of additional almond milk at a time and blend until the desired consistency is reached.
  • Pour the finished dressing into a mason jar for storage. When ready to use, drizzle it over the salad of your choice.

Notes
