Ingredients

For the Chicken

  • Avocado oil cooking spray enough to lightly and evenly coat the chicken
  • 1/2 lb chicken breast sliced into approximately 1-inch strips

For the Buffalo Cottage Cheese Sauce

  • 1/2 cup cottage cheese preferably Good Culture
  • 1 tsp ranch seasoning with Hidden Valley recommended for a classic ranch flavor
  • 1/4 cup Frank’s RedHot Original Hot Sauce

For Assembly

  • Shredded mozzarella cheese as desired
  • Low-carb Mission tortillas as needed

Instructions

  • Preheat the air fryer. Set the air fryer to 390°F (200°C) and allow it to preheat so the chicken begins cooking at the proper temperature and develops an evenly browned exterior.
  • Arrange the chicken. Place the chicken breast strips in the air fryer basket. An air fryer liner may be used to reduce sticking and simplify cleanup.
  • Air-fry the chicken. Mist the chicken lightly with avocado oil spray, ensuring the pieces receive an even coating. Cook at 390°F (200°C) for approximately 12 minutes, checking that the chicken is completely cooked before removing it from the air fryer.
  • Blend the buffalo sauce. While the chicken cooks, add the cottage cheese, Frank’s RedHot Original Hot Sauce, and ranch seasoning to a blender. Blend until the sauce develops a smooth, uniform consistency.
  • Coat the cooked chicken. Transfer the finished chicken to a bowl and pour the blended cottage cheese buffalo sauce over the top. Toss or shake thoroughly until every piece of chicken is evenly covered.
  • Assemble the wrap. Portion approximately 5 ounces of the coated chicken mixture for one serving. Add shredded mozzarella cheese if desired, then place the mixture inside a low-carb Mission tortilla and serve.

Hidden Valley ranch seasoning may be used for a more traditional ranch-style flavor; either regular or spicy ranch seasoning can be used.
