Ingredients

  • 2 large eggs
  • ½ teaspoon finely ground nutmeg preferably freshly grated
  • 1 cup full-fat cottage cheese for the best consistency
  • 1 teaspoon pure vanilla extract such as Nielsen-Massey
  • 2 teaspoons baking powder
  • ½ cup pure Grade A Amber Rich maple syrup
  • cups old-fashioned rolled oats not quick-cooking oats
  • ½ teaspoon salt
  • ½ cup miniature chocolate chips or standard chocolate chips, optional
  • 1 teaspoon ground cinnamon

Instructions

  • Gather and measure the cottage cheese, rolled oats, eggs, maple syrup, vanilla extract, baking powder, cinnamon, nutmeg, salt, and chocolate chips before beginning.
  • Preheat the oven to 350°F (175°C).
  • Place the cottage cheese, rolled oats, eggs, maple syrup, vanilla extract, baking powder, cinnamon, nutmeg, and salt in a blender. Process until the mixture becomes smooth, creamy, and thoroughly combined.
  • Transfer the blended batter to a mixing bowl. Fold in the chocolate chips gently, distributing them evenly without overmixing.
  • Divide the batter evenly among the muffin cups. Leave sufficient space at the top of each cup to allow the muffins to rise during baking.
  • Bake in the preheated oven until the muffins are light, moist, and fluffy. Test the center of a muffin with a toothpick; it should come out clean when the muffins are fully baked.
  • Allow the muffins to rest in the pan for several minutes. Transfer them to a wire cooling rack and let them cool before serving.
  • Serve the cooled cottage cheese blender muffins as a breakfast item or wholesome snack.

Notes

Full-fat cottage cheese provides the most favorable texture. Use old-fashioned rolled oats rather than quick-cooking oats. The chocolate chips may be omitted, and either miniature or regular-sized chips may be used.
