. Prepare the oven and baking pan. Preheat the oven to 350°F (175°C). Line a cookie sheet with parchment paper or a silicone baking mat to help prevent sticking.
Make the cookie dough. Place the almond flour, packed brown sugar, vanilla extract, pieces of unsalted butter, and salt in a mixing bowl. Thoroughly combine the ingredients until a cohesive dough forms and is firm enough to hold its shape.
Portion and shape the cookies. Measure the dough with a tablespoon-sized cookie scoop and roll each portion into a ball. Gently press each ball to flatten it slightly. Alternatively, shape the dough with cookie cutters if desired.
Arrange and decorate. Position the shaped cookies evenly across the prepared baking sheet, leaving some space between them. Sprinkle the tops with red and green sprinkles before baking, if using.
