Cheesy Ground Beef Sliders

Ingredients

  • 1 small onion diced or finely grated
  • 3 Tbsp unsalted butter melted
  • 2 tsp sesame seeds
  • 1 tsp pepper
  • cup shredded cheddar cheese
  • 2 lb ground beef
  • 10 slices cheddar cheese
  • 2 tsp garlic powder
  • 12 brioche slider buns
  • 1 tsp salt
  • ½ cup mayonnaise or homemade Avocado Oil Mayonnaise
  • ¼ cup sriracha aioli*
  • *Sriracha Aioli
  • 1 cup mayonnaise
  • 2 Tbsp sriracha sauce
  • 1 Tbsp lime juice
  • 1 clove garlic minced or finely grated
  • tsp salt

Instructions

  • Preheat the oven to 375 °F and lightly coat a 9 × 13 inch baking dish with non-stick spray; warm a 12-inch skillet over medium heat.
  • Cook ground beef with onion, salt, pepper, and garlic powder, stirring often, until the meat browns, about 10 minutes; drain excess grease if necessary.
  • Whisk mayonnaise, sriracha, lime juice, garlic, and salt in a small bowl to make the aioli; set aside.
  • Off the heat, blend ½ cup mayonnaise and the shredded cheddar into the browned beef until evenly combined.
  • Line the prepared dish with the bottom halves of the slider buns, layer five cheddar slices over them, spoon on the beef mixture, drizzle with sriracha aioli, top with the remaining cheddar slices, and cap with the bun tops.
  • Brush the buns with melted butter, scatter sesame seeds over the surface, and bake, uncovered, for 15–20 minutes until the cheese is fully melted and the tops are lightly browned.
  • Allow the sliders to rest briefly before slicing and serving hot.

Notes

Adjust the sriracha in the aioli for a milder or bolder kick; leftovers warm well in a 300 °F oven for about 10 minutes.
