Pour the Pinot Grigio, caramel vodka, and chilled apple cider into a large pitcher. Stir thoroughly until the three liquids are evenly blended into a uniform sangria base.
Remove the cores from the apples, then cut the fruit into thin slices or small diced pieces, according to your preferred serving style.
Add the prepared apples directly to the pitcher, or divide them among individual serving glasses before pouring in the sangria. The fresh fruit will gradually contribute additional apple flavor while retaining a pleasant crisp texture.
Place the prepared sangria in the refrigerator for at least 1 hour before serving to allow the flavors to mingle and the apples to infuse the beverage. Alternatively, serve it immediately over ice if a chilled drink is desired without the resting period.
