Ingredients

  • 1 standard box spice-flavored cake mix such as Duncan Hines Moist Deluxe Spice Cake Mix
  • One 15-ounce can pure pumpkin ensuring it is pumpkin purée rather than pumpkin pie filling

Instructions

  • Preheat the oven to 350°F (175°C). Cover the cookie sheets with parchment paper to prevent the cookies from sticking and to simplify cleanup.
  • Place the spice cake mix and canned pumpkin in a large mixing bowl. Stir thoroughly until the ingredients form a smooth, evenly combined dough with no visible pockets of dry cake mix.
  • Spoon rounded portions of dough onto the prepared cookie sheets, allowing adequate space between each mound. Bake for 13–15 minutes, or until the centers appear set.
  • Leave the cookies on the baking sheets for 5 minutes. Transfer them carefully to a wire cooling rack and allow them to cool completely before serving.
