One Pot Smoked Sausage Pasta

Ingredients

  • ½ cup heavy cream
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 12 oz can diced tomatoes
  • 8 oz dry whole wheat bow tie pasta
  • 2 cups shredded cheddar cheese
  • 2 cups chicken broth
  • 2 lb smoked sausage sliced into bite-sized pieces
  • 3 Tbsp olive oil
  • ¼ teaspoon pepper

Instructions

  • Warm the olive oil in a large pan over medium heat and sauté the chopped onions along with the sliced smoked sausage until the onions are translucent and the sausage is lightly browned.
  • Incorporate the minced garlic and stir briefly until fragrant.
  • Pour in the chicken broth, add the diced tomatoes, heavy cream, and pepper, stirring thoroughly to combine all elements.
  • Mix in the dry pasta, ensuring each piece is fully submerged in the sauce. Cover the pan and allow it to simmer gently for 15 to 20 minutes, or until the pasta is tender.
  • Fold in 1 cup of the shredded cheddar cheese, stirring until it has melted completely into the sauce.
  • Serve hot, garnished with additional cheese or sour cream if desired.
