Ingredients

  • 2-4 baby steaks see note for recommended size
  • 2 teaspoons minced garlic
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried Italian herb blend
  • 2-4 pounds baby potatoes diced
  • Garlic powder to taste
  • 1 teaspoon chopped fresh parsley
  • 2-6 tablespoons salted butter softened (1 tablespoon per steak, plus 2 tablespoons for the potatoes)
  • 1 teaspoon chopped fresh thyme

Instructions

  • Preheat the oven to 400°F (200°C). In a small bowl, mix together the softened butter, minced garlic, and dried herbs. Set this mixture aside.
  • Generously season both sides of the steaks with salt, pepper, and garlic powder.
  • Heat a large, oven-safe skillet over medium-high heat and add olive oil. Sear the steaks for 2-3 minutes per side, until browned. Remove steaks from the pan and set aside on a plate.
  • In the same skillet, add the diced baby potatoes. Season them well with salt, pepper, and garlic powder. Sauté for about 3-5 minutes until they start to turn golden brown.
  • Push the potatoes to one side of the skillet, making room to return the steaks to the other side.
  • Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the potatoes are tender and the steak reaches your preferred doneness.
  • Once removed from the oven, place a portion of the garlic butter mixture on each steak, letting it melt. Stir the remaining butter into the potatoes, coating them thoroughly. Garnish with chopped thyme and parsley before serving.

Notes

For this recipe, select steaks that are approximately 1 inch thick, and 4-6 inches long. This ensures they fit well alongside the potatoes in the skillet. Thinner steaks may overcook during the oven phase. A cast-iron skillet is highly recommended for achieving a perfect sear on the steak.
