Ingredients

  • 1 pound hot pork sausage
  • 2 cups Bisquick baking mix
  • 1 cup shredded cheddar cheese
  • 8- ounce block of cream cheese softened

  • Preheat your oven to 350°F (175°C). Prepare two large baking sheets by lining them with parchment paper.
  • In a stand mixer bowl, combine the hot pork sausage and softened cream cheese. Mix until well blended. You can also use a hand mixer or mix by hand if preferred.
  • Gradually add in the Bisquick baking mix and continue mixing until thoroughly incorporated.
  • Stir in the shredded cheddar cheese, adjusting the amount to taste. Mix until the cheese is evenly distributed throughout the sausage mixture.
  • Scoop the mixture into 1-inch balls using a spring-loaded cookie scoop or your hands, and arrange them on the prepared baking sheets. For a more uniform shape, gently roll the balls in your hands.
  • Place the baking sheets in the refrigerator for about 10 minutes to chill the sausage balls. This step helps prevent them from spreading during baking.
  • Bake the chilled sausage balls in the preheated oven for approximately 25 minutes, or until they are firm to the touch and golden brown.

Notes

This recipe yields approximately 64 sausage balls.
If you do not have an electric mixer, mixing by hand is also effective, though messier. Ensure all ingredients are well combined.
To freeze: Arrange sausage balls about an inch apart on a wax-paper-lined baking tray and flash-freeze for a few hours. Transfer the frozen sausage balls to a freezer-safe ziplock bag. When ready to bake, follow the instructions above, adding a few extra minutes to the baking time.
For a fun variation, try substituting Red Lobster Cheddar Bay Biscuit mix for the Bisquick. You can also replace the shredded cheddar cheese with pimento cheese spread or another favorite cheese variety.
