- 1,3 kg Rhabarber
- 500 g Magerquark
- 300 g Schlagsahne
- 1 ½ Pck. Vanillepuddingpulver zum Kochen
- 1 Pck. Aroma Citro-Back oder die geriebene Schale einer Zitrone
- 400 g Zucker
- 350 g Butter
- 450 g Mehl
- 4 m.-große Ei er
- 1 Pck. Backpulver
- n. B. Puderzucker zum Bestäuben
Instructions
- Zuerst den Rhabarber waschen, putzen und in 1 – 2 cm lange Stücke schneiden.
- Für die Quarkcreme den Quark mit der flüssigen Sahne, dem Puddingpulver, dem Citro-Back bzw. der Zitronenschale und 75 g Zucker glatt rühren.
- Für die Streusel 125 g Zucker, 150 g Butter in Flöckchen und 200 g Mehl mit den Knethaken des Handrührgerätes verkneten, danach mit den Händen kurz zu Streuseln zerbröseln und beiseite stellen.
- Für den Teig zuerst das restliche Mehl (250 g) mit dem Backpulver gut vermischen. In einer Rührschüssel 200 g Zucker und 200 g Butter schaumig rühren und die Eier nach und nach einzeln unterrühren. Zum Schluss das mit dem Backpulver vermischte Mehl kurz unterrühren.
- Den Teig gleichmäßig auf eine mit Backpapier belegte Fettpfanne (ca. 32 cm x 39 cm) streichen. Die Quarkcreme auf den Teig streichen, die Rhabarberstücke auf der Creme verteilen und zum Schluss die Streusel darüber streuen.
- Den Kuchen im vorgeheizten Backofen bei ca.150 °C Umluft etwa 45 – 50 Minuten backen.
- Den fertigen Kuchen etwa 2 Stunden auskühlen lassen und vor dem Servieren mit Puderzucker bestäuben.
- Dazu schmeckt Schlagsahne.
- Varianten: Man kann diesen Kuchen auch mit anderen säuerlichem Obst backen, z.B. mit Beeren, Kirschen oder Pflaumen.
