- Salz und Pfeffer frisch gemahlener
- 1 große Zwiebel n
- 2 EL Öl
- 1 kl. Kopf Wirsing
- 5 m.-große Kartoffel n
- 4 m.-große Möhre n
- 1 ½ Liter Gemüsebrühe
- 1 Bund Petersilie
Instructions
- Die Zwiebel schälen, halbieren und in feine Streifen schneiden. Möhren und Kartoffeln waschen, schälen und würfeln. Den Wirsing putzen, vierteln, den Strunk entfernen und die Blätter grob hacken. Vom Kasseler, falls vorhanden, die Knochen wegschneiden und beiseitelegen. Das Fleisch würfeln.
- In einem großen beschichteten Topf Öl erhitzen, das Kasseler und die Knochen hinzufügen und kross anbraten. Die Zwiebeln hinzufügen und mit dem Fleisch anschwitzen. Möhren, Kartoffeln und Wirsing zum Kasseler geben, mit der Brühe aufgießen und mit Salz und Pfeffer würzen. Den Eintopf zum Kochen bringen und ohne Rühren zugedeckt auf kleiner Flamme 15 – 20 Minuten köcheln lassen.
- Die Knochen entfernen und den Eintopf mit Salz und Pfeffer abschmecken. Die Petersilie waschen, hacken und vor dem Servieren unterrühren.
