Baked Crunchy Hot Honey Chicken

Ingredients
- 2 tablespoons hot sauce
- 1/2 teaspoon onion powder
- 2 pounds chicken breast tenderloins
- 1/4 cup grated parmesan cheese
- 2 large eggs, beaten
- Extra virgin olive oil, for drizzling
- 6 cups cornflakes (gluten-free if required)
- 1/2 teaspoon garlic powder
- 1 teaspoon smoked paprika
For the Hot Honey:
- 1/2 teaspoon onion powder
- 1–3 teaspoons cayenne pepper
- 1/2 cup honey
- 3/4 teaspoon chipotle chili powder
- Fresh thyme, cilantro, or parsley, for garnish
- Sea salt, to taste
- 1/2 teaspoon garlic powder
- 2–3 tablespoons hot sauce
Instructions
Preheat the oven to 425°F and prepare a baking sheet by lining it with parchment paper.
In a food processor, blend the cornflakes, parmesan, smoked paprika, garlic powder, onion powder, and a pinch of salt until a fine crumb forms. Alternatively, place the ingredients in a zip-top bag and crush thoroughly. Transfer to a shallow bowl.
In a separate bowl, whisk the eggs, then incorporate the hot sauce and chicken tenderloins, ensuring each piece is evenly coated.
Press each chicken tenderloin into the crumb mixture until thoroughly coated. For added crunch, repeat the dipping and coating process a second time. Arrange the coated chicken on the prepared baking sheet and drizzle lightly with olive oil. Bake for 20–25 minutes, or until the coating is golden and crisp.
While the chicken bakes, combine the honey, hot sauce, cayenne pepper, chipotle chili powder, garlic powder, onion powder, and a pinch of salt in a small saucepan. Heat until warmed through.
Once the chicken is finished, drizzle generously with the warmed hot honey sauce and garnish with fresh herbs. If the sauce becomes too thick, briefly reheat in the microwave for a few seconds before serving.
